Potatoes a lo pobre, also known as patatas al món or al pelotón depending on the region, are a typical dish of Spanish gastronomy that is not difficult at all but that allows us to bring a rich and forceful recipe to our tables. For a long time it has been considered food for the poor because it is made with humble ingredients, but I assure you that they are delicious and well worth preparing at home. They can be a single dish or, in smaller quantities, be served as an accompaniment to stronger dishes.
Ingredients to make French fries:
- 4 potatoes
- 1 onion
- 2 garlic cloves
- 100 milliliters of extra virgin olive oil
- Salt to taste
How to make Poor French fries:
- Peel the potatoes and cut them into slices about half a centimeter thick. Wash the potatoes well and let them drain.
- Trick: You can cut the potatoes with a knife or with a mandolin so that the pieces are all the same thickness.
- On the other hand, we peel the onion and cut it in Juliana, that is, into strips.
- Take the garlic cloves, which must be large, and press them hard on the counter with your hand or fist to crush them lightly. We leave them with the skin.
- We put olive oil in a wide frying pan (it should cover the base at least one centimeter or more) and we put it to heat.
- Add the garlic and let them fry for a couple of minutes.
- We added the onion to the bread along with the garlic to continue with the recipe for fried potatoes.
- Season the potatoes with salt to our liking and carefully add them to the pan. It is important that they do not carry water so that the oil does not splash on us.
- Stir well and let fry, moving from time to time so that they cook evenly.
- When they are soft, remove from the heat and serve the fries to the poor.
- They are perfect to accompany any other dish, such as garlic ribs, or vegan options such as baked cauliflower. Good appetite!
