Ingredients to make pomace sorbet:
- For 8 people:
- 1/4 of L. of quality white wine
- 1/4 of L. of syrup made with:
- of water and
- 140 gr. of sugar
- the juice of an orange
- the juice of 1/2 lemon
- 3 tablespoons of pomace (preferably Galician).
How to make pomace sorbet:
- Mix the wine with the cold syrup.
- Add the pomace and the strained citrus juice.
- Put in the fridge for 30 minutes and then put in the freezer.
- Serve in glasses between the first course and the main dish.
- If you don’t have a refrigerator, put the preparation in an ice cube tray or beat with a fork to break the ice crystals and put it back in the freezer.
- Repeat this operation three or four times until the straw acquires the right consistency.
