Pomace sorbet

Ingredients to make pomace sorbet:

  • For 8 people:
  • 1/4 of L. of quality white wine
  • 1/4 of L. of syrup made with:
  • of water and
  • 140 gr. of sugar
  • the juice of an orange
  • the juice of 1/2 lemon
  • 3 tablespoons of pomace (preferably Galician).

How to make pomace sorbet:

  1. Mix the wine with the cold syrup.
  2. Add the pomace and the strained citrus juice.
  3. Put in the fridge for 30 minutes and then put in the freezer.
  4. Serve in glasses between the first course and the main dish.
  5. If you don’t have a refrigerator, put the preparation in an ice cube tray or beat with a fork to break the ice crystals and put it back in the freezer.
  6. Repeat this operation three or four times until the straw acquires the right consistency.
