Poblano molotes recipe

• 500 grams of nixtamalized corn flour

• 100 grams of wheat or rice flour

• Salt to taste

• Vegetable oil

• 400 grams of shredded chicken

• 1 white onion julienned

• 200 grams of tomato puree

• Green sauce to accompany

• Cream to accompany

How to make Molotes poblanos:

To make the molote poblano recipe, first prepare the corn dough. To do this, mix the nixtamalized corn flour, salt, baking powder and wheat flour. Then, add warm water little by little until the dough forms, you can also add a little oil or butter. Cover with a damp cloth and let rest.

While the dough rests, prepare the chicken tinga. In a pot with a little oil, fry the onion julienne and season with a little salt and pepper. Add the tomato puree and mix very well.
