Pippin Ceviche Recipe

Ingredients to make Pippin Ceviche:

  • 1 kilogram of Pippin
  • 1 cup of Cilantro chopped
  • 1 liter of lemon juice
  • 500 grams of shrimp or prawns
  • Scallops and oysters to taste (optional)
  • 60 milliliters of olive oil
  • 1 unit of chopped green onion
  • 1 unit of common onion in brunoise
  • 1 pinch of salt
  • 1 pinch of pepper
  • ½ teaspoon garlic powder
  • ½ unit of chopped green chili (optional)

How to make Pippin Ceviche:

First, cook the shrimp or prawns and peel them once cold. Leave the rest of the ingredients well chopped and reserve to have everything ready.

Cut the fish into small cubes and place them in a bowl. Bathe the fish with the lemon juice, adding the necessary amount to cover it completely. If leftover, reserve it for another preparation.

Let the pippin marinate for about 1 hour. Meanwhile, cook the onion in hot but not boiling water for 5 minutes. Strain it and drain it very well.

After an hour, add the oil, cilantro, garlic powder, chili, onion, salt and pepper to taste to the ceviche. Mix very well and add the shrimp and, if you wish, previously cooked and shelled scallops or oysters.

If you want, you can add two tablespoons of mayonnaise to the pippin ceviche and mix everything well. This Chilean preparation is ideal to serve as a starter. You can accompany it with meat empanadas.
