Pinto beans with vegetables recipe

We start the week after the holidays with a rich and very appetizing spoon dish, a stew of pinto beans with vegetables. A very simple stew of pinto beans with vegetables that makes a very good dish with little.

The pinto bean is very buttery and therefore does not need much when cooking it, since it leaves a thick broth and is dark in color from the legume, the only thing is that its skin is harder and it needs more cooking time. You can prepare the vegetarian/vegan pinto beans in a traditional pot and cook them little by little for an hour, but if you have a quick pot they will be ready in 20 minutes.

Ingredients to make Pinto Beans with Vegetables:

  • 400 grams of dried pinto beans
  • 1 onion
  • 1 green bell pepper
  • 2 carrots
  • 1 leek
  • 1 bay leaf
  • 4 tablespoons of fried tomato
  • 1 tablespoon of red paprika
  • 1 splash of olive oil
  • 1 pinch of salt

How to make Pinto Beans with Vegetables:

1.We prepare the ingredients for the vegetarian pinto beans. We will soak the legumes overnight or at least 10 hours.

2.Put all the clean and whole vegetables in the pan where we are going to prepare the pinto bean stew (you can also chop the vegetables) and add the fried tomato. We add the legumes too, cover with cold water and put everything on the fire.

3.Add the spoon of paprika and a splash of oil. Let the pinto bean stew cook for 1 hour or until the vegetables are tender. They may take a little longer depending on the beans or the type of water.

4.When they are cooked, we take part of the vegetables, or all of them as we like, and grind them, then add this sauce to the stew of vegetarian stewed pinto beans, taste for salt and cook for 5 more minutes.

5.And ready to eat! A very simple dish of black beans with vegetables that is delicious for any occasion.
