Ingredients to make Pinto Beans with Rice in a pressure cooker:

  • 300 grams of pinto beans
  • 150 grams of bomb rice
  • 1 clove garlic
  • 1 carrot
  • 1 onion
  • 1 leek
  • 1 tablespoon of flour
  • 1 teaspoon sweet paprika
  • 1 pinch of hot paprika
  • 3 tablespoons of olive oil
  • 2 bay leaves
  • 3 grams of salt

How to make Pinto Beans with rice in a pressure cooker:

1.We begin to prepare these pinto beans with rice in a pressure cooker by soaking them overnight with plenty of water and a teaspoon of salt.

2.Next, in an express pot, put the pinto beans, the bay leaves, the salt, the onion, the carrot and the chopped leek; and add water to cover. We put the pressure cooker to cook about 20 minutes from when the steam begins to come out and once this time has elapsed, we carefully depressurize it (it will take approximately an hour between everything to make the pinto beans in the pressure cooker).

3.While the pinto beans are being made in an express pot, in another separate pot, first brown the garlic a little and add the rice and twice as much water as cereal. Then let it boil over high heat for 10 to 15 minutes and then let the boiled rice rest for another 5 minutes.

4.Once the pinto beans are cooked in the pressure cooker, remove the carrot and leek and reserve them in the cooking broth for later.

Tip: If you don’t want to take out the vegetables, you can leave them right there to accompany the beans with rice in a slow cooker.

5.Next, fry the chopped onion in a frying pan with a trickle of hot oil over low heat and, when translucent, add the flour and mix well. Then we add the sweet and hot paprika, we fry them a little so they don’t burn and then we add a little of the broth from the cooking of the pinto beans in an express pot to bind everything together.

6.Lastly, add the previous mixture to the pot of stewed pinto beans and let everything boil for approximately 15 minutes. After this time, we will have our pinto beans with rice in an express pot ready. Take advantage.
