Pineapple Rice Salad Recipe

Ingredients to make Pineapple Rice Salad:

  • 180cc of oil
  • 200 grams of rice
  • 2 teaspoons of sugar
  • 2 eggs
  • 130 grams of corn kernels
  • 80 grams of canned hearts of palm
  • 1 chicken breast
  • 100 grams of canned pineapple
  • 1 pinch of salt
  • 1 splash of vinegar

How to make Pineapple Rice Salad:

Cook the rice in double the amount of water for about 20 minutes with a pinch of salt and a splash of oil.  Once cooked, wash in plenty of cold water and place in a bowl. At the same time, cook the breast with a pinch of salt until it is cooked, finely chop. A mayonnaise is made with the eggs, a pinch of salt, the sugar and the vinegar, incorporating the oil little by little.

It joins the rice, the shredded chicken, the corn, the heart of palm and the pineapple, cut into slices. Mix everything well with the mayonnaise and put it to cool in the fridge. It is served cold.
