Pineapple Coconut Tamales Recipe

• 400 grams of nixtamalized corn flour

• 2½ cups warm water

• ½ cup of sugar (100 grams)

• 1 teaspoon baking powder

• 1 tablespoon vanilla

• 1 teaspoon ground cinnamon

• 400 grams of pineapple in pieces

• 200 grams of grated coconut (2 cups)

• 1 cup of syrup or pineapple juice

• 90 grams of melted butter

How to make Coconut Pineapple Tamales:

To start with the coconut pineapple tamales recipe, clean the tamale leaves well and soak them in hot water to soften for about 20 or 30 minutes.

For the tamale dough, in a bowl mix the corn flour with the water and stir. Then, add the sugar, the baking powder, the cinnamon and the vanilla, integrate everything very well.

Next, blend the pineapple chunks with about 2 tablespoons grated coconut and pineapple syrup or juice to form a slightly runny paste.

Finally, add the rest of the grated coconut and mix once more so that the coconut is integrated into the dough. Now it’s time to assemble the tamales. Take a leaf and add a portion of the dough, distribute from the center upwards, wrap and close the tamale well, then place it in a steamer pot, then cook for about 1 hour over medium heat.
