Ingredients to make Pig Ear in delicious sauce:
- 500 gr of cooked pig’s ear (the one I buy is cooked and marinated)
- 1 teaspoon paprika
- 1 tablespoon of flour
- Black pepper
- 1 onion
- Fresh parsley
- Salt
- Olive oil
- Water
- 2 garlic cloves
- 1 cayenne (optional)
How to make Pig’s Ear in delicious sauce:
- Cut the onion into brunoise (small cubes) and press the garlic, if we don’t have a garlic press we will chop it very small.
- Pour a drizzle of olive oil in a casserole and sauté the onion and garlic, add the cayenne, a little salt and a pinch of pepper.
- When it begins to take on color, it is time to add the paprika and flour, sauté for a few seconds so that it does not taste raw and quickly add the water because otherwise it could burn.
- Let it come to a boil again and cook for about 3 minutes, then add the ear, which is already chopped, and the chopped fresh parsley.
- We move and cook over a very low heat (to prevent it from sticking or burning) for about 10 more minutes and it will be ready to enjoy.
