Pesto Risotto Recipe

Ingredients to make Pesto Risotto:

  • 1 cup of Arborio rice
  • 1 bunch of fresh Basil
  • 2 teaspoons of pine nuts
  • 1 unit of white onion
  • 350 grams of shrimp
  • 120 grams of milk cream
  • 1 glass of white wine
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 pinch of garlic paste
  • 2 teaspoons of Butter
  • 500 milliliters of Water

How to make Pesto Risotto:

  1. The first step to make our recipe is to prepare the ingredients for the easy pesto risotto.
  2. Take a deep pot over medium heat, add a little olive oil and add the white onion in small squares.
  3. Once the onion is transparent, add the Arborio rice and let it sauté for a few minutes.
  4. Cover with water or if you prefer, you can also use a broth to flavor (chicken or meat). Add salt and some aromatic herbs of your choice, I have used a little thyme.
  5. Besides, we are going to prepare the shrimp. To do this, take a pan over medium heat with a little butter and sauté the shrimp with salt and pepper to taste.
  6. Add the basil leaves with the garlic paste and let it fry.
  7. Add the white wine and let the shrimp absorb it. Put out the fire.
  8. Add the sautéed shrimp to the other pot with the risotto and mix the ingredients of our recipe very well.
  9. Add the milk cream and the rest of the butter so that the rice obtains a creamy consistency.
  10. Finally, add the pine nuts. If you can’t find pine nuts, you can replace them with any other dry fruit.
