Pesto Mashed Potatoes Recipe

Ingredients to make Pesto Mashed Potatoes:

  • For the pesto:
  • 1 cup Basil
  • 1 clove garlic
  • 2 tablespoons Almonds or walnuts
  • 170 grams of grated Parmesan
  • 1 pinch of black pepper
  • 59 milliliters of olive oil
  • 1 pinch of salt
  • For the mashed potatoes:
  • 1 teaspoon of Oil
  • 158 milliliters of milk cream
  • 8 potatoes
  • 10 garlic cloves
  • 200 milliliters of sour cream

How to make Pesto Mashed Potatoes:

  1. The first thing to do to make this pesto mashed potatoes is to wash the basil very well and reserve it for later.
  2. Place the potatoes in pieces in a saucepan and boil them until the texture of the potatoes is tender.
  3. Cook approximately 25-30 minutes.
  4. Preheat the oven to 180º C. Place the 10 garlic cloves in the center of a square of aluminum foil.
  5. Drizzle a drizzle of olive oil over the garlic.

  14. Pour the heavy cream, sour cream, and butter mixture over the homemade mashed potatoes.
  15.  Add pepper and salt, to taste. Stir very well until you achieve a smooth and creamy consistency.
