Peruvian Flyers Recipe

This dessert was created in colonial times, formerly it was called convent dessert. It was made by the old Spanish nuns, but over the years it changed until it became flying, this refers to the different layers that it has upwards. The flyers used to be found in most corners of Lima, specifically in the well-known “ambulantes”, a dessert on the go with a lot of flavor and history. The traditional filling is pineapple jam and a layer of manjar blanco, however, today there are different variations in terms of filling and presentation. Among the jams that are used are golden gooseberry, strawberry, peach and pear.

Ingredients to make Peruvian Flyers:

  • 230 grams of unprepared wheat flour
  • 7 eggs
  • 60 milliliters of pisco
  • 3 tablespoons of white vinegar
  • 2 grams of salt
  • 300 grams of manjarblanco
  • 50 grams of unsalted butter
  • 200 grams of powdered sugar
  • 200 grams of pineapple jam

How to make Peruvian Flyers:

  1. To start with the Peruvian flying recipe, you must first form a wheat flour fountain with the back of a container. Add the salt into the flour.
  2. Separate the white from the yolks of each one of the eggs and in the center of the volcano, place the yolks, the pisco, the vinegar and the melted butter.
  3.  With the help of your hands, integrate the ingredients from the center out.
  4. Trick: it is important that the butter is not hot, otherwise the yolks will cook.
  5. Knead approximately 6 minutes until the dough does not stick to the table.
  6. Cover the dough with plastic wrap or a plastic bag and let it rest for approximately 20 minutes.
  7. After the time, sprinkle the flour on the counter and stretch the dough. It must be very fine.
  8. Using a circle cutter, shape circles and place on a platter or silpat. Then, with the help of a fork, prick the dough to prevent it from rising when it is in the oven.
  9. Place them on a baking tray and place them in the appliance for approximately 15 minutes at 170ºC. We point out that the fried flyers are also delicious, therefore, you can choose the way you like best to cook them, in the pan or in the oven.
