Ingredients to make Peppered Beef Tenderloin:
- 300 grams of beef sirloin
- 80 milliliters of Milk (⅓ cup)
- 80 milliliters of sweet red wine
- 3 grams of peppercorns
- 20 milliliters of sunflower oil
- 1 pinch of Salt and Pepper
How to make Peppercorn Tenderloin:
- Prepare all the ingredients.
- Cut the sirloin into equal medallions, season with salt and pepper and place in a hot frying pan. Cook the meat to the desired finish, then remove to a plate and wait until the juices settle.
- In the same pan, add the wine with the peppercorns and deglaze, that is, the juices and fats concentrated in cooking can be removed from the pan. Let the alcohol evaporate for 1 minute.
- Add the heavy cream and cook for 1 minute, stirring constantly. Rectify flavor with a little salt.
- Finally add a good amount of pepper so that the flavor is more concentrated.
- Serve the medallions and cover with the sauce, making sure not to serve the peppercorns. Peppermint beef tenderloin is a wonderful and elegant dish that you can serve on a special occasion like Christmas or Thanksgiving, accompanied with white rice or gratin mashed potatoes.
