Pepper and Chicken Bites Recipe

Ingredients to make Pepper and Chicken Bites:

  • 16 peppers
  • 2 chicken breasts
  • 16 slices of Iberian ham
  • Oil
  • Black pepper
  • Salt

For the mashed potatoes

  • 3 large potatoes
  • 1 egg yolk
  • 1 knob of butter
  • ½ glass of milk
  • Water

How to make Bell Pepper Chicken Bites:

Peel, chop and cook the potatoes in salted water for 15-20 minutes. Drain them and pass them through the food mill, add the egg yolk, the butter, the milk and mix well. Clean, cut the breasts into 12 fillets and season them with salt and pepper.

Roll the fillets around the peppers, prick them with a toothpick and fry them over high heat until they are completely done. Take them out of the pan and drain them. Cut the stem and remove the seeds. Put the puree in a pastry bag and fill the peppers. Place them on a plate and place them in the oven for 3 minutes at 180º C, to heat them.

To serve, place the Iberian ham at the bottom of the tray and the stuffed sandwiches on top. The potatoes should be cooked in cold water and let the water gradually heat up until it starts to boil.
