Penne with Zucchini Cream Recipe

Ingredients to make Penne with Zucchini Cream:

  • 300g Penne Rigate
  • 2 zucchini
  • 1 onion
  • 1 clove garlic
  • 100 grams of Parmesan cheese
  • 100 Gr. of Milk Cream
  • salted
  • Pepper
  • nutmeg

How to make Penne with Zucchini Cream:

  • Prepare the ingredients.
  • Boil the noodles in salted water for 8 minutes.
  • Wash, cut the zucchini in 4 and remove a little of the white part with seeds. Then cut them into julienne strips. Finely chop the garlic and onion.
  • In a frying pan with oil, put the onion until white.
  • Then add the garlic and mix.
  • Immediately add the zucchini, lower the heat and cover the pan for a few minutes. This way we will allow the zucchini to cook and not burn the garlic or onion.
  • When we notice that they are tender, pour in the cream. Season with salt, pepper and nutmeg. Mix, cover and leave over low heat for a few more minutes.
  • When the pasta is al dente, drain, add a splash of cold water to stop cooking and set aside.
  • Add the pennes to the zucchini cream. Season again if necessary and sauté for another minute.
  • Remove, serve with grated cheese and enjoy!
