Penne with Asparagus Cream Recipe

Ingredients to make Penne with Cream of Asparagus:

  • 500g asparagus
  • 2 tbsp. oil
  • 170g ricotta cheese
  • 10 oz. penne pasta

How to make Penne with Cream of Asparagus:

  1. Cook the asparagus until tender.
  2. They are chopped into large pieces, leaving the tips intact (these are saved for later).
  3. Puree the bits of asparagus together with 1 tablespoon of the oil (this can be in the food processor or in the blender).
  4. Combine the ricotta cheese (already drained) with the other tablespoon of oil.
  5. Cook the pasta al dente and strain well.
  6. Return to the pan where it was cooked and add the puree and sauté until well blended.
  7. It is garnished with ricotta and the tips of the asparagus.
