Peas with ham is a well – known dish and is one of the most popular ways to cook these vegetables. This recipe for peas with seitan that I share is a vegan version of the dish in which I have replaced the ham with seitan, a vegetable substitute for meat rich in proteins based on wheat gluten. It is a simple and quick recipe to prepare, an ideal option for an express lunch or dinner full of nutrients.
Ingredients to make Peas with seitan:
- 500 grams of frozen peas
- 1 onion
- ½ leek
- 150 grams of seitan
- 1 splash of olive oil
- 2 cloves of garlic
- ½ teaspoon of salt
- 1 pinch of black pepper
- 1 cup vegetable broth
How to make Peas with seitan:
Dice the onion, finely slice the port and finely chop the garlic. Dice the seitan. If you want to do it yourself, follow this recipe for vegetable wheat meat. In a pot, heat the oil and sauté the onion, garlic and leek for about 2 minutes. Add the seitan and continue cooking for another minute. Add the peas to the pot and cover them with the vegetable broth. Bring to a boil and cook until the peas are tender and the broth is reduced, about 10-12 minutes.
Tip: If you feel like it, you can leave a little broth in the bottom or let it reduce completely.
Serve the snap peas with seitan.
