Peas with onion and egg recipe

Peas do not usually have a good reputation, and yet, cooked gracefully, they are very tasty and we bring a healthy and appetizing dish to the table.

Ingredients to make Peas with onions with egg:

  • 500 grams of peas
  • 100 grams of bacon
  • 2 onion
  • 1 vegetable stock cube
  • 1 dessert spoon of smoked paprika
  • 1 splash of olive oil
  • 1 glass of water
  • 1 pinch of black pepper
  • 1 egg

How to make Peas with onions with egg:

  1. Peel and chop the onion. Heat a frying pan with a drizzle of extra virgin olive oil and when it is hot add it.
  2. We stir from time to time and, once it starts to turn transparent, we add the crumbled vegetable stock cube and the water. We can replace the water and the bouillon cube with homemade vegetable broth.
  3. Stir well and add the drained peas.
  4. Add the paprika and pepper mix well, cover and cook the peas with onions until the water has almost evaporated, without forgetting to stir from time to time.
  5. Tip: If the peas are a little hard (because we use fresh or frozen peas, for example) and it is necessary, we could add a little more water.
  6. Finally, we split the bacon into strips or cubes and add it.
  7. Mix well and sauté until done.
  8. When the bacon is ready, add the egg, mix very well and after a few minutes we have our dish ready to serve.
  9. These peas with egg and onion are ideal for dinner or as an accompaniment to another main dish, such as cod fillet with tomato. Good appetite!
