Ingredients to make Cream Soup of peas and bacon:
- 500 g fresh peas
- 2 tablespoons of flour
- 1 tablespoon of butter
- 800 ml of chicken broth
- 1 pot of milk cream
- 150 g of pancetta in small cubes
How to make Cream of Peas and Bacon Soup:
- In a large pot, put the peas in salted water to cover them by about 2 cm, cover and cook for 15 minutes.
- Then place the peas with the cooking water in a blender or processor along with the flour and process until a smooth and homogeneous mixture is achieved.
- Pour into the pot and put it over moderate heat, add the butter, broth, salt and pepper, and wait for it to boil.
- Lower the flame to a minimum and let the soup cook for 2 minutes, stirring occasionally.
- Add the milk cream and cook for a few more minutes.
- Separately, in a hot Teflon pan, brown the bacon cubes until they are crispy, remove and dry on absorbent paper.
- Serve the soup in individual cups and decorate with the bacon cubes.
