Pea and Bacon Cream Soup Recipe

Ingredients to make Cream Soup of peas and bacon:

  • 500 g fresh peas
  • 2 tablespoons of flour
  • 1 tablespoon of butter
  • 800 ml of chicken broth
  • 1 pot of milk cream
  • 150 g of pancetta in small cubes

How to make Cream of Peas and Bacon Soup:

  1. In a large pot, put the peas in salted water to cover them by about 2 cm, cover and cook for 15 minutes.
  2. Then place the peas with the cooking water in a blender or processor along with the flour and process until a smooth and homogeneous mixture is achieved.
  3. Pour into the pot and put it over moderate heat, add the butter, broth, salt and pepper, and wait for it to boil.
  4. Lower the flame to a minimum and let the soup cook for 2 minutes, stirring occasionally.
  5. Add the milk cream and cook for a few more minutes.
  6. Separately, in a hot Teflon pan, brown the bacon cubes until they are crispy, remove and dry on absorbent paper.
  7. Serve the soup in individual cups and decorate with the bacon cubes.
