Pasta with shiitake and cream recipe

Shiitake mushrooms are a type of fungus that is very popular in Japan and, therefore, widely used in Asian cuisine. Outside this market, it can be more difficult to find these mushrooms, however, more and more we can see them in stores specializing in this type of product and even in supermarkets, although in these latter establishments it is more common to see them canned or dehydrated.

Shiitake are highly prized for their incredible flavor, listed as “delicious.” In addition, they have important properties for the body, since they are rich in protein, B vitamins and minerals. For all these reasons, they are also widely used in vegan and vegetarian diets. Whether you follow this type of diet or not, we suggest you make this pasta recipe with shiitake and cream, a very simple dish full of flavor. Will you? Well keep reading!

Ingredients to make Pasta with shiitake and cream:

  • 200 grams of cooked pasta
  • 200 grams of fresh or canned shitake mushrooms
  • 1 piece of chopped leek
  • 1 cup chopped and cooked broccoli
  • 200 milliliters of cream (milk cream)
  • 1 splash of olive oil
  • 1 tablespoon capers (optional)
  • 1 handful of grated Parmesan cheese
  • 1 pinch of black pepper
  • 1 pinch of salt

How to make Pasta with shiitake and cream:

  1. Heat a drizzle of olive oil in a frying pan. When hot, sauté the chopped leeks and shiitake mushrooms. Cook for 2-3 minutes over medium heat. If you use canned shiitake you should also cut and sauté them, while if you use dehydrated shiitake you will first have to hydrate them in water.
  2. Trick: You can substitute the leek for onion, also chopped.
  3. Add the cooked broccoli, mix with the leek and mushrooms and continue cooking. We have steamed the broccoli with a pinch of salt and cut it, but you could also boil it in water or cook it in the oven.
  4. Add the cream and salt and pepper to taste. Cook the shiitake pasta sauce for 1 minute, add the cooked pasta, mix and leave the preparation on the heat for a couple more minutes. We have chosen short pasta, but you could also make shiitake mushrooms with spaghetti following this same step by step.
  5. Tip: If the sauce thickens too much, add a little milk or broth from cooking the pasta.
  6. Clever! Now you can serve the pasta with shiitake and cream sprinkling grated Parmesan cheese on top and some capers. This is a very simple and complete recipe, perfect even for Tupperware or for one of those days that we don’t have much time to cook.
