Pasta with raw vegetables recipe

Ingredients to make Pasta with raw vegetables:

  • 2 tomatoes
  • two tablespoons of capers
  • 2 garlic cloves
  • a handful of black olives,
  • salt, olive oil
  • 1 mozzarella cheese
  • grated Parmesan cheese

How to make Pasta with raw vegetables:

  1. Cut the tomatoes into cubes, cut the olives (pitted) in half and finely chop the garlic and the capers also finely.
  2. Add salt to taste and 1 tablespoon of olive oil.
  3. Put everything in a bowl and cover with a kitchen towel. Let it rest for half an hour.
  4. While the fusilli are being prepared, cut the mozzarella into cubes and grate the Parmesan.
  5. Bring the pasta to a boil (al dente for 11 minutes), control the taste of the vegetables and add salt, if any, and add the mozzarella.
  6. When the pasta is ready, we mix it with the vegetables and add grated Parmesan to taste.
  7. It is an easy and quick dish.
