Pasta with cauliflower and cheese recipe

Ingredients to make Pasta with cauliflower and cheese:

  1. 180 grams of cauliflower
  2. 200 grams of whole meal spaghetti
  3. 2 garlic cloves
  4. ½ teaspoon Herbs de Provence
  5. 30 grams of gouda cheese
  6. 30 grams of Havarti cheese
  7. 4 tablespoons olive oil
  8. 1 pinch of salt
  9. 1 pinch of ground black pepper

How to make Pasta with Cauliflower and Cheese:

  • We begin by cooking the pasta in abundant boiling water with a little salt. In another pot, cook the cauliflower (cut into florets) in boiling water for 5-6 minutes. We drain and reserve.
  • Tip: The cooking time will depend on the manufacturer’s time.
  • In a frying pan, we sauté the peeled garlic together with the cooked cauliflower and 4 tablespoons of olive oil. Let the garlic and cauliflower brown for 3 minutes.
  • Next, we add the Provencal herbs, a little salt and ground black pepper. We cook 3 more minutes. If you have fresh herbs at home, you can add varieties such as basil or oregano, which work very well. Meanwhile, we preheat the oven with the option of gratin.
  • Once cooked, add the spaghetti to our cauliflower stir-fry with herbs and stir to integrate with the oil and the rest of the flavors. If you want, you can put 2 tablespoons of the pasta cooking water to make it juicier.
  • Place the pasta with scrambled cauliflower in a baking dish and add the cheeses on top. We put the pasta in the oven to gratin until the cheeses melt.
