Pasta Salad with Avocado and Cheese Recipe

Ingredients to make Pasta Salad with Avocado and Cheese:

  • 200 grams of short pasta
  • 1 avocado
  • 1 handful of basil, chopped (fresh or dried)
  • 200 grams of grated white cheese
  • 3 tablespoons of virgin or extra virgin olive oil
  • 2 tablespoons of rosemary vinegar
  • 1 pinch of salt
  • Chopped walnuts or peanuts

How to make Avocado Cheese Pasta Salad:

Cook the pasta in a saucepan with boiling water that covers up to two fingers above. Check the manufacturer’s instructions and check so that the pasta is “al dente”, that is, neither too soft nor too hard, but just right. Pass the pasta through a strainer, drain the water very well and reserve.

Almost everything ready to go with our recipe! Place all the ingredients on the table to assemble the preparation of the pasta salad.

Remember to measure each ingredient, according to the proportions suggested by the recipe. Crush the nuts or peanuts, in my case peanuts. You can crush with mortar or with any electric kitchen helper you have.

Chop the parsley in small pieces, if it is fresh. It is also valid to use dried parsley. Let’s go to the mess!

Next we are going to chop the avocado. Why don’t we chop the avocado beforehand?  Because it is preferable at the moment, because this fruit darkens very easily. You can place the avocado in a bowl and season with salt, in my case I keep it natural.
