Ingredients to make Pasta with sun-dried tomato pesto:
- 150g sun-dried tomatoes, in oil
- 50 g grated Parmesan cheese
- 50g of pine nuts
- 25 g fresh basil leaves
- 80ml olive oil
- 500g spiral
- 150 g chopped asparagus
- 250g cherry tomatoes, halved
How to make Pasta with Sun-Dried Tomato Pesto:
- Drain the sun-dried tomatoes and grind them in a food processor along with the cheese, pine nuts and basil until you get fine dough. Add the oil.
- Cook the pasta until al dente. Drain and place in a large serving dish.
- Pour the tomato mixture over the hot paste and stir well. Add the hot asparagus and cherry tomato halves.
