Pasta recipe with sun-dried tomato pesto

Ingredients to make Pasta with sun-dried tomato pesto:

  1. 150g sun-dried tomatoes, in oil
  2. 50 g grated Parmesan cheese
  3. 50g of pine nuts
  4. 25 g fresh basil leaves
  5. 80ml olive oil
  6. 500g spiral
  7. 150 g chopped asparagus
  8. 250g cherry tomatoes, halved

How to make Pasta with Sun-Dried Tomato Pesto:

  1. Drain the sun-dried tomatoes and grind them in a food processor along with the cheese, pine nuts and basil until you get fine dough. Add the oil.
  2. Cook the pasta until al dente. Drain and place in a large serving dish.
  3. Pour the tomato mixture over the hot paste and stir well. Add the hot asparagus and cherry tomato halves.
