Passion fruit pie recipe

This recipe for passion fruit pie is a must among Venezuelan desserts that you should try at least once in your life if you like that contrast of sour and sweet so typical of other desserts such as lemon pie.

Passion fruit, also known as passion fruit or passion fruit, is a fruit rich in Vitamin A and Vitamin C which, thanks to its antioxidant properties, prevents aging, protects against sun damage and strengthens the immune system. In addition, it is an excellent fruit to enjoy in desserts, as it gives a unique touch to any sweet preparation.

Ingredients to make Pie de passion fruit:

  • For the filling:
  • 3 egg yolks
  • 1 can of condensed milk (397 grams)
  • 1 cup passion fruit juice (200 ml)
  • For the base:
  • 160 grams of Maria-type sweet cookies
  • 3 cups of melted butter
  • 90 grams of instant meringue (optional)

How to make Pie de Parchita:

  1. Crush the cookies until they are powdered in the blender or food processor.
  2. Melt the butter and mix it with the crushed biscuits in a bowl until it forms a moldable dough.
  3. In a greased mold, spread the dough to cover the edges, it should be approximately two fingers high. In this case, we use a 24 centimeter diameter mold.
  4. Poke small holes in the bottom of the dough with a fork or knife and bake for 15 minutes. As time passes, take it out of the oven and let it rest.
  5. Blend and strain the juice of 5 to 8passion fruit to obtain 1 cup of concentrated juice, remember that you should not add water or sugar.
  6. Trick: The passion fruit are chosen for their weight and the consistency of their interior, although some sometimes weigh more because of their shell that turns out to be thicker than normal.
  7. Break the yolks into a bowland add the concentrated juice and condensed milk, mix very well by hand until even and smooth.
  8. Pour the passion fruit pie mixture with condensed milk on top of the base cookie when it is at room temperature.
  9. Bake the passion fruit foot with Maria cookie at 180 degrees for 20 to 25 minutes, with heat up and down if possible.
  10. Finally, prepare the meringue and add it when the pie filling is warm. It is important that you do not add it when it is still hot because it will melt and may be misshapen.
  11. You can give your passion fruit foot a more beautiful look by using a sleeve to decorate.
  12.  Once you have added the meringue, you can also bake it for 10 more minutes with heat only on top to brown it a little. Let rest before serving and enjoy!
