Panga all’acqua pizza recipe

The fish all’acqua pizza is an Italian recipe. Traditionally, Neapolitan fishermen cooked their fish with a mixture of salty sea water and wine, hence the term, which literally means “in crazy water”. The recipe admits variations in the choice of ingredients. This version is very tasty and, with white fish such as phantasies, it is ideal for children to eat this protein food –it can even be prepared without wine, just with water. Keep reading and discover the steps to cook Italian-style pang in white wine.

Ingredients to make Panga all’acqua pizza:

  • 2 phantasies fillets
  • 150 grams of cherry tomato
  • 50 grams of Olives
  • 165 grams of artichoke hearts
  • 1 glass of water
  • ½ glass of white wine
  • 1 pinch of Coriander
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 splash of olive oil

How to make Panga all’acqua pizza:

  1. To cook our pang all’acqua pizza, we first prepare all the ingredients. This time we have chosen the phantasies, but you can prepare this recipe with any other fish. We recommend choosing pieces without bones, since it is a kind of stew, eaten with a spoon. The olives can be green or black, but better pitted.
  2. Place the phantasies fillets in a deep frying pan with a little oil and let it heat for a couple of minutes over medium heat.
  3. Cut the cherry tomatoes into two or three pieces each previously washed.
  4. Add the tomatoes to the pan and let them cook another couple of minutes over medium heat.
  5. Then pour the water and wine, and add a little salt and pepper to taste. Increase the heat a little and let it cook for about 10 minutes, so that the water and wine evaporate, stirring from time to time carefully so as not to chop the fillets.
  6. Now add the rest of the ingredients: the artichoke hearts, the olives and the coriander or parsley (we have opted for coriander this time, but the parsley also gives it a very good flavor). Continue cooking for about ten more minutes, moving the pan to prevent the fillets from sticking to the bottom.
  7. After ten minutes, the water will have been reduced to a very tasty broth. All that remains is to serve our delicious pang all’acqua pizza!
