Panamanian Sancocho Recipe

Ingredients to make Panamanian Sancocho:

  • 1 unit of Chicken (about 2kg.)
  • 500 grams of Yucca
  • 500 grams of Otoe
  • 2 units of corn on the cob
  • 2 sprigs of coriander
  • 1 kilogram of Yam
  • 1 unit of Onion
  • 1 unit of green chili
  • 1 pinch of salt
  • 4 cloves of minced Garlic
  • 2 dessert spoons of oregano

How to make Panamanian Sancocho:

  • Cut the hen into pieces and place them in a pot, add about 10 cups of water (or cover the hen with enough water), put it on the fire.
  • Lower the heat when it starts to boil.
  • Add Otoe, corn, cassava, squash and yams and cook slowly until softened.
  • Add the onion, peppers, coriander, garlic and salt, 1 tablespoon of oregano.
  • Cook for 10 or 15 minutes more. Turn off the heat and add the other tbsp. of oregano and cover to rest for 10 minutes and serve.
  • Note: if you want to cook the vegetables separately, you can.
  • This Panamanian sancocho is served with white rice.
