Ingredients to make Panamanian Chicken Rice:
- 4 pieces of chicken
- 1 green bell pepper
- 1 red paprika
- 1 large onion
- 2 tomatoes
- 1 small bouquet of coriander
- 4 garlic cloves
- 2 cups of rice
- 1 small carrot cubed
- 50 grams of olives
- 50 grams of green peas
- 1 tablespoon of ground annatto or onto
How to make Panamanian Chicken Rice:
- To give your Panamanian-style chicken and rice plenty of flavor, start by adding salt and pepper to the cleaned chicken pieces. You can also use soy sauce or other flavorings.
- Dice the onion and the green and red bell peppers.
- Also chop the tomatoes and cilantro. Also, grate or crush the garlic cloves.
- Sauté the chicken pieces in about three tablespoons of oil until golden brown. This will take about 5 minutes.
- Then add the onion and bell peppers. Reserve some of the latter for the final cooking. Stir in the chicken.
- After a minute, add the tomatoes, cilantro and garlic.
- When the vegetables begin to release their juices, add the achieve.
- After about 5 minutes, add the water. The amount of water will depend on the amount of rice, since the broth that is produced will be the liquid that you will use to prepare the rice. Let boil for about 20 minutes. Remove the chicken and reserve the broth.
- In the other three tablespoons of oil, fry the rice with the turmeric. You can also substitute the turmeric for more annatto powder.
- When the rice takes on the color of turmeric, pour in the broth. Make sure it is the amount needed to prepare the rice.
- Also add the rest of the ingredients: more cilantro, olives, already boiled and chopped carrots and peas. Also the red and green bell peppers that you reserved earlier.
- While the rice is ready, shred all the chicken. By the way, control the cooking of the rice so that it is not very dry or very wet.
- When the rice is ready, add the chicken and stir well. Serve hot.
