This time we take you on a journey through the paths of the so-called “Venezuelan loaners”, men on horseback, tough and hardworking who need a high caloric intake. For this reason, we offer you a tasty recipe, timely for anyone who needs a lot of energy: Palo a pique or paloapique loaner.

And what is the pike stick? Well, it is actually a dish made up of a combination of rice with beans called “Boca de Santo” (not the beans) and boiled penton plantain, often sprinkled with salty grated white cheese. As commonly happens in Venezuelan cuisine, it has many versions, depending on the region where it is prepared or the taste of the diners.

Other alternatives with which you can prepare the paloapique are: salted beef frayed in fibers, dried meat, meat from game animals, white or red beans stewed in soffit , white rice, ripe plantain or fried plantain slices, beef, ground beef, pork, pork chop, spices, pipeline, tomatoes and sweet or hot peppers, green pooch, pork rinds and even with black pudding.

If you need large doses of energy, this traditional Venezuelan dish is for you. Do you dare to prepare your own version?

Ingredients to make Palo a pique loaner:

  • 250 grams of bay beans or kidney beans
  • 500 grams of white rice
  • 150 grams of pork chop
  • 150 grams of beef
  • 1 large bell pepper (preferably red)
  • 2 medium onions
  • 1 potato
  • 2 small tomatoes
  • 3 garlic cloves
  • 1 spring onion, spring onion or green onion
  • 500 milliliters of chicken broth
  • 1 splash of vegetable oil or olive oil
  • 100 grams of bacon (optional)
  • 150 grams of black pudding (optional)
  • 150 grams of chicharrón (optional)
  • 1 pinch of salt
  • 1 pinch of cumin
  • 1 envelope of Carmencita or food coloring
  • 2 sweet peppers
  • 1 garlic joint
  • 1 pinch of oregano
  • 1 pinch of ground pepper

How to make Palo a pique loaner:

1.Select the legumes, discarding the branches, stones and defective beans. Then, use a bowl to place the bay beans with water and let them rest all night before preparing the stick to chop. Discard any grains that float. The next day wash several times and drain very well. To prepare good beans with chops, soaking is very important.

2.Prepare a saucepan with enough water to cover the beans. Cook until legumes are tender. Separately, prepare a sauce with onion, garlic, green pepper, sweet pepper, and oregano, salt and ground black pepper. Then add the stew to the saucepan. Wait approximately 30 more minutes of cooking. If it consumes a lot, add water and stir. At the end of the preparation, reserve 2 cups of beans with little liquid.

Tip: Optional: you can also add pork rinds to the Guiana paloaqpique, that’s how they cook it in some parts of Venezuela.

3.Prepare all the necessary ingredients and supplies. Wash the vegetables; chop the beef and pork (chop) into cubes. Measure the necessary proportions of each ingredient and reserve.

The combination of beans with pork, in addition to the rest of the ingredients, ensures a great energy load for the body.

4.Prepare the rice using 2 cups of rice to 1 cup of water. Cook over high heat, wait until it breaks into a boil, and add salt and cover. Lower the heat, calculate about 10-12 minutes and check the consistency of the rice. Booking.

5.Cut all the ingredients into cubes or julienne. Crush (crush) the garlic or finely chop it.

Tip: Vegetables represent an essential part of any Venezuelan recipe.

6.Prepare a saucepan with oil and fry all the vegetables. In this step you have two options: either you sauté all the vegetables or you sauté the onion and garlic first and then add the meats (beef and pork). Remember that in both cases you have to add the Carmencita or food coloring.

Trick: Other ingredients that you can add to the sauce are black pudding and bacon.

7.Add the meats and sauté until everything is roasted and seasoned.

Tip: This Venezuelan recipe is very versatile, because you can even replace some ingredients with more common ones from your area.

8.Add the rice little by little and stir. All ingredients must be perfectly integrated.

9.This traditional Venezuelan dish can satisfy anyone in the world who needs a good dose of energy or has strenuous work days.
