Ingredients to make Paglia e fieno with walnuts:
- 500 g of fresh pasta
- extra virgin olive oil
- 1 large onion
- 1 egg yolk (optional)
- white pepper
- salted
- 100 g walnuts, peeled and coarsely chopped
- grated Parmesan cheese to serve
- 200 ml of liquid cream
How to make Paglia e fieno with walnuts:
- Sauté the finely chopped onion in a little oil until it is golden brown.
- Add the walnuts and the whipped cream with the yolk if used.
- Cook slowly until it begins to thicken, season with salt and pepper and pour over the cooked pasta.
- Serve immediately accompanied by Parmesan cheese.
