Paglia e fieno recipe with walnuts

Ingredients to make Paglia e fieno with walnuts:

  • 500 g of fresh pasta
  • extra virgin olive oil
  • 1 large onion
  • 1 egg yolk (optional)
  • white pepper
  • salted
  • 100 g walnuts, peeled and coarsely chopped
  • grated Parmesan cheese to serve
  • 200 ml of liquid cream

How to make Paglia e fieno with walnuts:

  1. Sauté the finely chopped onion in a little oil until it is golden brown.
  2. Add the walnuts and the whipped cream with the yolk if used.
  3. Cook slowly until it begins to thicken, season with salt and pepper and pour over the cooked pasta.
  4. Serve immediately accompanied by Parmesan cheese.
