Paella recipe with sausages

Ingredients to make Paella with sausages:

  • 500 grams of rice
  • 500 gr of ribs chopped into pieces
  • 6 sausages
  • 6 tablespoons of oil
  • 1 head of garlic
  • Salt
  • 1 ñora (very hot paprika, chilli)

How to make Paella with sausages:

  1. Cook the ribs in salted water for 3/4 of an hour.
  2. Remove and separate the meat from the bone and continue cooking until soft.
  3. Cut each sausage in two.
  4. Put the oil to heat in the paellera.
  5. Fry the previously chopped and seedless ñora.
  6. Remove and crush in a mortar together with the saffron and a little broth.
  7. Measure the broth (double the amount of rice), add the saffron and leave it to heat.
  8. Rectify the seasoning
  9. In the same fat from the paellera, brown the head of garlic, the sausages and the meat of the ribs.
  10. Add the rice if the sausages release too much fat remove a little.
  11. Sauté and pour the broth passing it through a strainer or a chinois and squeezing so that the ñora releases all the substance and color.
  12. As soon as it starts to boil, count 20 minutes and reduce the heat to medium cooking.
  13. Time over.
  14. Remove and let the paella rest for a few minutes before serving.
  15. For 5 people.
