Paella recipe with lean meat

Ingredients to make Paella with lean:

  • For 5 people:
  • 500 gr. of rice
  • 250 gr. de magro (lean pork meat close to the loin)
  • 1 black pudding
  • 1 sausage
  • 1 can of peas
  • 1 tin of bell peppers
  • 8 tablespoons of oil
  • 1 small onion
  • 1 tomato
  • 1 sprig of parsley

How to make Paella with lean:

  1. Put 4 tablespoons of oil in a frying pan and fry the chopped onion very slowly and when it turns colored, add the chopped tomato without skin or seeds, season, fry slowly for a few minutes, heat the rest of the oil in the pan, fry the lean meat in pieces, the sausages cut into wheels, add the onion and tomato preparation passed through the potato mill, stir to mix well and add the rice and 1 liter of water or broth.
  2. Count 20 minutes as soon as it starts to boil.
  3. Crush the garlic, parsley, a pinch of salt and the saffron in a mortar, dissolve with a little lukewarm water, pour and mix quickly with the rice.
  4. After 10 minutes add the peas and the peppers cut into strips.
  5. When cooking is finished, remove the pan from the heat and let it rest for a few minutes before serving.
