Ingredients to make Paella with fresh tuna belly or tuna:
- For 4 people:
- 200 grams of rice
- 400 grams of fresh tuna belly (can also be made with tuna)
- ½ white onion
- 1 green pepper
- 1 medium tomato
- 3 garlic cloves
- 1 liter of fish broth
- ½ lemon
- 4 tablespoons of virgin olive oil
- Salt
How to make Paella with fresh tuna belly or tuna:
- We clean the belly of the bonito, we remove the skin and the bones.
- Cut it into large pieces and reserve it.
- Chop the onion, the green pepper, the garlic and the peeled tomato in brunoises (finely minced) Put the paella pan on the fire, with 4 tablespoons of virgin olive oil, fry the belly over and over until it is golden brown, remove it from the peeler and we reserve it.
- Add the onion, garlic, green pepper and tomato to the pan, fry until the onion and garlic begin to brown.
- Add the rice and let it fry for 2 minutes.
- We wet the paella with the hot fish broth and distribute the rice evenly.
- Season with salt and a few drops of lemon.
- As soon as it starts to boil, add the chopped belly, distributing it over the rice.
- We let the broth be completely consumed for 18 minutes.
- Cover the paella with a clean kitchen cloth so that the rice does not overcook and let it rest for 2 minutes.
- Then we serve hot.
