Ingredients to make MACKEREL WITH SALT IN THE OVEN:
- 3 MACKERELS of about 420 gr each
- 2 KG OF COARSE SALT FOR OVEN (USE COAST OVEN COARSE SALT)
- THYME
- ROSEMARY
- OREGANO (the herbs are fresh if they are better if not dry)
How to make MACKEREL WITH SALT IN THE OVEN:
- When I entered the fishmonger I didn’t know exactly what I was going to do to try the salt, the gilthead bream were well priced at €5.95 kg, it is the typical dish to make with salt, and next to it there were some precious mackerels about 420 gr units at €3.25 kg. I thought I’ll try. We clean the fish at home Clean the mackerel, open it by the belly, remove the guts and wash well. Leave them in a strainer so that they release the water well. Put the oven to heat at 220º
- In an oven tray, cover the tray with coarse salt, sprinkle on top with rosemary, thyme and thyme (I used it dry in pieces), distribute some lemon slices. Put the mackerels on top, inside the belly of these put the herbs and on top of each mackerel a couple of lemon slices. Sprinkle over the oregano, thyme and rosemary
- Cover everything with the rest of the coarse salt. Wet it with a few drops of water and press with your hands to make it compact (to prevent the grains of salt from sticking to me, I put cling film on top and I was squeezing carefully). Put the tray in the oven and let it cook one 20 minutes at 200º. Calculate for each piece of about 400 gr from 15 to 20 minutes.
- Check to see if they are. If you have a thermometer click at the end of cooking if it is over 70º you can turn it off and you can serve it.
