Original Peasant Soup Recipe

Ingredients to make original peasant soup:

  • 2 tablespoons vegetable oil
  • 2 cups of sweet corn kernels
  • 1/2 medium onion finely chopped
  • 1 finely minced garlic clove
  • 1 small bunch of squash blossoms, washed and roughly chopped
  • 1 large tomato, seeded and roughly chopped
  • 6 tablespoons chopped fresh coriander
  • 3 medium zucchini cut into thin julienne strips
  • 1 large poblano pepper roasted, peeled, deveined, cored and cut into thin strips
  • 125 g of fresh cheese crumbled
  • 1 ½ liters of chicken broth

How to make Original Peasant Soup:

  1. The corn kernels are fried in the oil for 8 minutes.
  2. Add the onion and fry until transparent, then the garlic and chicken broth, letting it cook until the corn kernels are tender.
  3. Add the rest of the ingredients and let it boil, taking care that the zucchini do not cook too much.
  4. The soup is served with some sprinkled cheese.
