Original Cantonese Rice Recipe

Ingredients to make original Cantonese Rice:

  • 50 grams of boiled peas
  • 2 eggs
  • 1 slice of cooked ham
  • 1 pinch of salt
  • 2 spring onions
  • 1 splash of oil
  • 2 cups of rice

How to make original Cantonese Rice:

  1. Wash the rice well in several waters until no trace of starch remains.
  2. Put the rice in a saucepan along with the same amount of water and bring to a boil with the saucepan hermetically closed to prevent steam from escaping
  3. Cook over medium heat until the water is consumed.
  4. Lower the heat to a minimum, put a diffuser plate on top and the casserole on it.
  5. Keep a few minutes until the rice is cooked.
  6. Reserve.
  7. Beat the eggs and form a very thin tortilla.
  8. Cut it into thin strips.
  9. Trim the fat from the ham and also cut into strips.
  10. Heat oil in a large frying pan and lightly sauté the chopped onions.
  11. Add the rice, the tortilla and ham strips and the peas.
  12. Season with a little salt and sauté for a few moments, stirring constantly.
  13. This rice is tastier if it is cooked the day before.
