Salmorejo, also called Malaga orange porra, is a very old seasonal soup. The fact of incorporating oranges is due to the scarce number of tomatoes of that season, for this reason, orange juice was added to give flavor. This recipe consists of a very fresh soup for the summer. In addition, it can be served as a starter or as a single dish for a dinner. A humble, forceful and delicious recipe. You should also know that it is simple and quick to prepare, you will only need time for it to be very cold.

Ingredients to make Orange Salmorejo:

  • 2 units of oranges
  • 150 grams of bread from the day before
  • 1 clove garlic
  • 1 pinch of salt
  • 1 tablespoon of vinegar
  • 100 milliliters of olive oil

How to make Orange Salmorejo:

  • To start with the orange salmorejo recipe, you must first cut the bread from the day before into very thin slices and add to a bowl. Next, squeeze the oranges to obtain the juice, you will need about 2-3 oranges. The bread can be several days old and the more crumb it has, the better. Loaf bread or homemade village bread has a good crumb and is ideal for this dish.
  • Add part of the orange juice on the bread and stir so that it soaks well, leave for about 10 minutes, this way it will soften much better. Next, add the rest of the juice and, if more is needed, you can add it, since the amount of liquid can vary depending on the bread, you can also add a little cold water. Next, add the peeled garlic, a pinch of salt, a splash of olive oil and vinegar.
  • Start blending everything until you get a cream. Next, add the oil little by little and blend so that all the cream emulsifies.
  • Tip: add the oil according to your taste.
  • If you notice that there is a very thick cream left, you can add more orange juice and, if it is very liquid, you can add more bread to thicken the salmorejo. Then reserve in the fridge for 3-4 hours or until very cold.
