Orange and cod salad with walnuts recipe

This time I propose a cod salad with orange without spring onion. A salad with citrus touches, the contrast of the cod and the crunch of the walnuts, to create a very complete starter that we can prepare for these Easter days.

Fruit salads give it a fresh, sweet and sour touch and add a lot of flavor, which goes very well with vegetables. We can make our own salads and play with the flavors using the fruits that we like the most, so if you don’t know how to make a cod salad, try this orange and cod salad with walnuts that is very good and surprise yourself!

Ingredients to make orange and cod salad with walnuts:

  • 250 grams of Cod to the point of salt
  • 3 units of Oranges
  • 1 can of hearts of palm or asparagus
  • 1 endive unit
  • 1 unit of lettuce
  • 1 jar of black olives
  • 1 handful of walnuts
  • 1 jet of oil
  • 1 pinch of salt

How to make Orange and Cod Salad with Walnuts:

We prepare all the ingredients for the orange and cod salad with walnuts. I have chosen these but since it is a variation of the typical Andalusia orange and cod salad, you can remove or add the ones you prefer. Peel and cut 2 oranges into not very large segments.

Wash the lettuce and escarole that we are going to use and drain them well. We chop them into small pieces. We reserve. Cut the cod into thin slices.

We prepare the cod and orange salad, individually for each one, taking care of the presentation. We put a ring on a plate.

We put a little lettuce and cut escarole as the base of the orange and walnut salad. On top of this we put a layer of orange segments. We put another layer of lettuce and endive on top so that there is enough food. On top we put a layer of crumbled code. Place some olives and some chopped walnuts on top.

Trick: They can be olive.

And finally, we carefully remove the ring and accompany the orange and cod salad with walnuts with some asparagus and a handful more of these nuts. With the other orange we squeeze it and mix a little of the juice with olive oil and a pinch of salt and dress the cod and orange salad on top.
