Onion Soup Recipe

Ingredients to make onion soup:

  • 3 tablespoons olive oil
  • 6 large red or white onions, thinly sliced
  • 1 spoon of sugar
  • 1 teaspoon minced oregano
  • 1/2 teaspoon cumin powder
  • ¼ teaspoon allspice
  • ¼ ground cinnamon
  • ½ cup red wine vinegar
  • The juice of 1 orange
  • 1 and 1/2 liters of chicken broth
  • Salt
  • black pepper to taste

How to make onion soup:

  1. In a large pot, with the lid, heat the oil, add the onions and cook, stirring with a wooden spoon, until they turn transparent.
  2. Sprinkle with the sugar, oregano, parsley, cumin, allspice, and cinnamon, and cook about 20 minutes, stirring occasionally.
  3. Add the vinegar and orange juice, and cook 5 more minutes.
  4. Add the broth and bring to a boil over moderate heat.
  5. Cover and lower the heat so that the soup continues to simmer until it reduces and thickens.
  6. Add the salt and pepper.
