Onion and Thyme Soup Recipe

Onion soup is a very typical dish in Spain, typical of the time when there were fewer resources and dishes were prepared with the raw materials that were available. In this article, we have versioned this soup to lose weight, including red onion (instead of white) and giving it a Provençal touch with thyme. Do not miss the step by step of this delicious onion and thyme soup!

Ingredients to make Onion and Thyme Soup:

  • 2 units of purple onion
  • 4 sprigs of thyme
  • 25 grams of Butter
  • 1 pinch of salt
  • 500 milliliters of water
  • 1 unit of Egg

How to make Onion and Thyme Soup:

  • We gather all the ingredients to make the onion and thyme soup. In this case we have used red onion, but this recipe is originally made with white onion.
  • In a saucepan, melt the butter and add the julienned onion. Let it cook over low heat with a pinch of salt until the onion releases all its water.
  • When it is poached, add the water and bring to a boil. Cover and let cook for 20-30 minutes over low heat. We rectify salt if necessary.
  • This step is optional since we have decided to prepare an onion soup with egg. Then, while the previous preparation boils, we make the poached egg.
  • Put a layer of plastic wrap in a bowl, crack the egg, add a little salt, close it like a bag and put it in a pot of boiling water for 4 minutes. Once cooked, put it in cold water and remove the plastic wrap with the help of scissors. We booked.
  • On the other hand, add the thyme to the onion soup and let it infuse for 5 minutes.
  • Crush the onion soup with the help of a blender (it is necessary to remove the thyme). This soup should be like a very light cream.
