Ingredients to make Onion and Cheese Soup:
- 750 grams white onion
- 250 grams of bread
- 8 slices of cheese
- 1 lt. of vegetable broth
- 1 tablespoon fresh coriander (or parsley)
- A pinch of Paprika
- Salt
- freshly ground black pepper
How to make Onion and Cheese Soup:
- List the ingredients.
- Cut the bread into slices and toast it on each side. Reserve. Preheat the oven while we prepare the soup.
- Peel the onions and cut them into thin julienne strips.
- Brown them in a little oil or 2 tablespoons of butter. Season with pepper, paprika and salt
- Until you reach the desired point.
- Add the chopped coriander. Add the broth, mix, cover and cook for 15 minutes.
- Pour the hot soup into an oven-safe container.
- Place the toast on top.
- Finally cover with the cheese.
- Bake in a hot oven for about 15 minutes, or until the cheese is gratin. NOTE: These last steps should be done relatively quickly, to prevent the toast from getting soggy and completely submerged. Serve and enjoy!
