Onion and Cheese Soup Recipe

Ingredients to make Onion and Cheese Soup:

  • 750 grams white onion
  • 250 grams of bread
  • 8 slices of cheese
  • 1 lt. of vegetable broth
  • 1 tablespoon fresh coriander (or parsley)
  • A pinch of Paprika
  • Salt
  • freshly ground black pepper

How to make Onion and Cheese Soup:

  1. List the ingredients.
  2. Cut the bread into slices and toast it on each side. Reserve. Preheat the oven while we prepare the soup.
  3. Peel the onions and cut them into thin julienne strips.
  4. Brown them in a little oil or 2 tablespoons of butter. Season with pepper, paprika and salt
  5. Until you reach the desired point.
  6. Add the chopped coriander. Add the broth, mix, cover and cook for 15 minutes.
  7. Pour the hot soup into an oven-safe container.
  8. Place the toast on top.
  9. Finally cover with the cheese.
  10. Bake in a hot oven for about 15 minutes, or until the cheese is gratin. NOTE: These last steps should be done relatively quickly, to prevent the toast from getting soggy and completely submerged. Serve and enjoy!
