Olluco Ajiaco Recipe

Ingredients to make Ajiaco de olluco:

  • 2 cups of Ollucos
  • ½ cup evaporated milk
  • ½ cup of chopped fresh cheese
  • 1 unit of Egg
  • 2 units of potatoes
  • 2 tablespoons minced Garlic
  • 3 tablespoons of yellow pepper
  • 1 unit of medium onion
  • 2 tablespoons of oil
  • 1 pinch of chopped parsley
  • ¼ teaspoon of pepper
  • 1 pinch of salt

How to make ajiaco de olluco:

  • In a pot, heat the vegetable oil. When it is hot, brown the chopped onion in brunoise, the garlic, the ground yellow pepper and the pepper.
  • Add the chopped olluco and the potato cut into small cubes to the previous sauce. Let it boil between 25-30 minutes.
  • Once the olluco and the potato are cooked, pour the milk, the fresh cheese, the parsley, salt to taste and let it boil for 5 more minutes.
  • To serve as a platter, serve the olluco ajiaco sprinkled with chopped parsley and/or boiled egg cut into segments. If you wish, accompany it with white rice and/or a fried egg instead of a boiled one. Sliced ​​cooked potatoes are also suggested to give the dish more body.
