Old Woman’s Tummy Recipe

Barriguitas de vieja are typical pumpkin fritters or fritters from Puerto Rico. They are called old lady’s bellies because of their round shape. They are very rich sweets, simple to prepare and very much from the pumpkin season. They have a sweet vanilla flavor and can be eaten for breakfast or as a snack.

To make this recipe, pumpkin is the main ingredient, it must be pureed, and for this it can be cooked or baked. To finish this sweet can be covered in cinnamon sugar or sprinkled with icing sugar, although in some regions they are bathed with dulce de leche. It’s up to you! Just stay with this article and discover how to make old bellies in an instant.

Ingredients to make Barriguitas de vieja:

  • 200 grams of cooked or roasted pumpkin
  • 60 grams of flour
  • 1 tablespoon yeast dessert
  • 1 unit of egg
  • 50 grams of sugar (¼ cup)
  • 1 dessert spoon of ground cinnamon
  • 1 dessert spoon of vanilla aroma
  • 1 glass of sunflower oil
  • 2 tablespoons of icing sugar

How to make Barriguitas de vieja:

  1. To make this old lady’s bellies recipe, cook the pumpkin, it can be done in the oven at 180ºC until cooked or in the microwave.
  2. Put it in pieces in a bowl, cover it with plastic wrap and cook at maximum power for 9-10 minutes depending on the microwave. If it’s not cooked, leave it longer.
  3. When it is cooked, mash it well with a fork.
  4. Tip: you could also crush it, but it is too liquid.
  5. Put the pureed pumpkin in a mold. Add the sugar, cinnamon, vanilla and egg, mix everything well.
  6. Once it is well mixed, go adding the flour together with the teaspoon of yeast, mix until a thick mass remains like a puree. The amount of flour can vary, if it is liquid you have to add more.
  7. When the dough is ready, put it in the fridge for about 30 minutes to rest.
  8. Prepare a deep frying pan, put plenty of sunflower oil. We put the frying pan over medium heat and, when it is hot, with the help of a spoon, add portions of dough.
  9. Let them cook for 2-3 minutes on each side, being careful that they do not burn, they must be done on the inside. Fry the old lady’s belly in batches until they are all ready.
  10. Take them out and leave them on a plate with kitchen paper to release the excess oil
  11. Once they are all ready, put the homemade old tummies in a serving dish, sprinkle with icing sugar on top, serve and enjoy them warm.
