Oatmeal and dried fruit energy balls recipe

The energy balls are a perfect option for athletes and to snack between meals, since the nuts provide a lot of energy and satisfy hunger. In this recipe for energy balls I have used a variety of nuts: walnuts, sunflower seeds, raisins to give the balls a sweet touch, dried coconut flakes that provide a crunchy touch and healthy fats. For the chocolate touch and extra energy I have added carob cream, which you can find in herbalists or as a substitute you can use cocoa cream. I have also added oat flakes to make the balls more satiating and a little agave syrup to sweeten.

Ingredients to make energy balls of oats and nuts:

  • 1/4 cup walnuts
  • 1/3 cup rolled oats
  • 1/3 coconut flakes
  • 1 splash of agave syrup
  • 1/4 cup raisins
  • 2 tablespoons carob cream (or cocoa)
  • 1/4 cup oat milk
  • 1 teaspoon of sunflower seeds
  • 2 tablespoons grated coconut

How to make Nutty and Oatmeal Energy Balls:

  1. Soak the raisins in warm water for 15 minutes. Drain them well.
  2. Combine the walnuts, oatmeal, raisins, sunflower seeds and coconut flakes in the blender glass.
  3. Shred everything a little, nothing more so that it is slightly chopped.
  4.  If you don’t like chunks in your oatmeal and nut balls, grind some more.
  5. In a saucepan, heat the mixture of chopped nuts, the carob cream, the agave syrup and the non- dairy milk.
  6.  Stir the dough continuously, without stopping, while it heats so that it doesn’t stick until a dense dough forms. Remove the saucepan from the heat and let it cool.
  7. When the mixture has cooled, take portions of dough with your hands and form balls.
  8. Pass the oatmeal balls through the grated coconut and let them cool in the fridge before serving.
  9. As you can see in the image, these energy balls of oats and nuts are very juicy and their flavor is delicious.
