Ingredients to make Oatmeal Rice Pudding:

  • 100 grams of rice
  • 1 liter of oat milk
  • 2 tangerines (their peel)
  • 1 cinnamon stick
  • 75 grams of sugar
  • 1 tablespoon of margarine
  • 1 tablespoon ground cinnamon

How to make Oatmeal Rice Pudding:

  1. To start with the recipe for rice pudding with oatmeal and obtain a creamy dessert, first rinse the rice by passing it under water until the remains that it releases are not whitish.
  2. Trick: you must pass the rice through water several times to expel the starch.
  3. Put the oat milk, the rice, the cinnamon stick and the skin of the cut tangerines in a saucepan over the heat.
  4. You can cut the skin of the tangerine with a vegetable peeler and trying not to catch the white part of the skin. Next, cook over low heat for approximately 40 minutes, stirring occasionally.
  5. After 40 minutes, add the sugar and margarine, stir constantly for another 5 minutes.
  6. You will see that the light rice pudding will thicken more.
  7. Do not leave it completely dry, because when it cools the rice tends to absorb more liquid and it will be too dry, so it is always better to leave a little more milk.
  8. Tip: if you can’t or don’t want to consume sugar, you should know that unsweetened oatmeal rice pudding is also delicious.
  9.  You can also make rice pudding with oatmeal and stevia.
  10. With the heat already off, remove the tangerine skin and the cinnamon stick with a fork.
  11. Distribute the rice pudding and oats in small bowls and let cool completely.
  12. Then, take it to the fridge to cool completely and rest.
  13. Just before serving, sprinkle each bowl with ground cinnamon and enjoy your vegan rice pudding.
