Ingredients to make Nopales with corn and cheese:

  • 8 pieces of fresh Nepal
  • 1 fresh corn or cob
  • ¼ white onion
  • 1 clove garlic
  • 250 grams of string cheese
  • 1 pinch of salt
  • 1 pinch of Pepper
  • 1 tablespoon of bicarbonate of soda
  • 1 tablespoon of Oil

How to make Nopales with corn and cheese:

  2. To begin with our preparation we have to cook the nopales.
  3. For this, chop them into thin rectangles, then place them in a saucepan with enough boiling water, salt, half the onion, half the garlic and the tablespoon of baking soda.
  4. Let them cook for 10 minutes over medium heat. When they are tender and have changed color, remove them, drains and reserve.
  5. On the other hand, we shell the corn very carefully, helping ourselves with a knife.
  6.  We place the corn grains in a saucepan with boiling water, a pinch of salt, the rest of the onion and garlic and let them cook for 10 minutes over high heat.
  7. We will know that they are ready when they feel soft to the touch.
  8. Once ready, remove from the heat, drain the liquid and reserve.
  9. Tip: If you want, you can buy the corn kernels already loose.
  10. Once we have cooked the corn and the nopales, we take both and place them in a pan with hot oil.
  11. Add salt and pepper and stir- fry to integrate everything perfectly, keep cooking for about 6 more minutes.
  12. Once this time has passed, we serve hot nopales with corn and add the grated string cheese on top to gratin the dish and READY!
