Apart from being tasty, the nopal is very nutritious and quite cheap. They are one of those vegetables that we will always find in Mexican homes. we give you the recipe to prepare nopal cakes that you can eat alone or in tomato sauce.
Ingredients to make Nopal pancakes:

- 500 grams of tender No pales
- 250 grams of spinach
- 2 pieces of Onions
- 5 garlic cloves
- 1 cup oats
- 1 dessert spoon of cumin
- 1½ cups of olive oil
- 5 eggs
- For the soup
- 2 pieces of Cashable Chiles
- 3 cups of Water (720 milliliters)
- 500 grams of tomato
How to make Nopal Pancakes:
- The first thing we are going to do is prepare all the ingredients for the nopal pancakes.
- Wash the no pales and slice them into thin strips.
- They are fried in a little oil together with some finely sliced onion.
- Add a little salt and cumin.
- They should be very dry, without any juice. We booked.
- We wash the spinach, disinfect it and proceed to dry it. Then we fry them with a little oil; add the sliced onion, salt and a pinch of cumin.
- Let them be cooked without any water.
- Trick: Spinach can be substituted for chard.
- On the other hand, we cook the tomatoes together with the rattlesnake Chile from which we will have previously removed the seeds and the stem.
- We added a clove of garlic and a piece of onion to our cooking.
- Once the tomato and chills have cooked, let them cool and proceed to blend them to prepare the cedilla.
- We put a saucepan on the fire, pour a little oil on it, strain our tomato preparation and let it continue to season.
- As soon as it starts to boil, we add a pinch of ground cumin and salt to taste.
- We crack the whole eggs and place them in a bowl, in another container we put the previously cooked no pales and spinach, followed by the oats and stir perfectly.
- Finally, we add the eggs and mix.
- Place a frying pan over medium heat and fry the no pales mixture, putting tablespoon-sized portions.
- Once the nopal pancakes are fried, they are drained to remove excess oil. They are reserved separately.
- Meanwhile, lower the flame to the tomato stew that we left on the fire and add the nopal pancakes. Let them boil together between 5 and 10 minutes, season with salt and serve.
