Noodles with pig’s ear recipe

Ingredients to make Pig Ear Noodles:

  • 2 pig ears
  • 1 spring onion
  • 1 head of garlic
  • 250 gr. of noodles
  • Toilet
  • extra virgin olive oil Hojiblanca
  • salted
  • For the fry:
  • 2 spring onions
  • 2 garlic cloves
  • 1 bell pepper
  • 2 green bell peppers
  • 2 teaspoons paprika
  • ½ l. tomato sauce

How to make Pig Ear Noodles:

  1. Put in a casserole on the fire with plenty of water, a jet of oil and a pinch of salt.
  2. When it starts to boil, add the noodles and cook for 10 minutes.
  3. Drain and refresh them.
  4. Put water in the pressure cooker; add the spring onion, the head of garlic, a pinch of salt and the pig’s ears.
  5. Cover the pot and cook for 10 minutes after the steam begins to come out.
  6. Remove the ears, let them cool down and chop them up.
  7. Finely chop the spring onions.
  8. Peel the garlic and cut them into slices.
  9. Put everything to poach in a pan with oil.
  10. Clean the peppers cut them into fine julienne strips and add them to the pan.
  11. When it is well poached, add a couple of teaspoons of paprika, mix well, and add the tomato sauce and the pieces of pig’s ear
  12. Add the pasta to the pan, mix and serve in a wide dish.
  13. Tip: Pig ears admit many preparations.
  14. I advise you to prepare them in the same way as the octopus a fair.

  16. Heat a little oil in a pan, add a little paprika and spray the ears.
