Noodles with egg and cheese recipe

Ingredients to make Noodles with Egg and Cheese:

  • 30 gr of grated emmental
  • 40 gr of filleted almonds
  • 4 eggs
  • 4 tomatoes
  • Water
  • Extra virgin olive oil Hojiblanca
  • Salt
  • Chopped parsley

How to make Noodles with Egg and Cheese:

  1. Put the pasta to cook in a pot with plenty of boiling water and a pinch of salt.
  2. Cook as indicated on the pasta packaging.
  3. Drain, refresh and reserve them.
  4. For the sauce, reduce in another casserole, the cream, the fresh cheese mousse and the grated Emmental.
  5. In a frying pan, add a little oil, add the sliced ​​almonds and brown them.
  6. Add the spaghetti and sauté briefly.
  7. Serve in a large dish, forming 4 nests.
  8. On each nest, hatch an egg.
  9. Pour a little cheese sauce over each egg and place in the oven over high heat to gratin.
  10. Remove the tops of the tomatoes and cut them into thick slices.
  11. Fry them in a pan with oil and serve them around the pasta.
  12. Sprinkle with chopped parsley.
  13. It is important to remember the importance of cooking the pasta al dente, since if the pasta is soaked in water (soft), it will lose its taste.
