Noodles with aborigine’s recipe

Ingredients to make Eggplant Noodles:

  • 250 g of noodles.
  • 3 egg plants.
  • 100 g of filleted mushrooms.
  • 500 g of crushed tomato.
  • 2 minced garlic cloves.
  • 50 g of chopped onion.
  • 2 teaspoons basil
  • 2 teaspoons of parsley.
  • olive oil

How to make Eggplant Noodles:

  1. Wash and cut the aborigines into slices, without peeling them.
  2. We place the aborigines with a little salt and in a strainer for 2 hours, so that they release their bitter juice.
  3. We dry the aborigines from their juice.
  4. Sauté the onion and minced garlic, then add the crushed tomato, salt and a pinch of sugar and basil.
  5. Sauté the aborigines in olive oil, along with the filleted mushrooms and sprinkle with a little parsley.
  6. Cook the noodles in boiling salted water, drain and mix the tomato sauce with the noodles and accompany the sautéed aborigines and mushrooms.
